Cinnamon Walnuts Streusel Cake



 I first saw this recipe from My Kitchen Snippets I love it right the way! She made it so beautiful and looked yummy to me! Then I decided to make a small version one for our breakfast and as a snack for my son in his school. I had made little changes to the recipe that I had cut down a lot of butter and sugar portion ( I like less sweet cake :) and replaced the yogurt with the fresh cream due to it expires soon..... No waste mah...


Ingredients

125g of butter
½ cup of sugar
1 ¼ cup of flour
1 tsp of baking powder
¼ tsp salt
½ cup fresh cream (original was yogurt)

3 eggs
½ tsp of vanilla

Streusel

2 tbsp of brown sugar
½ cup of chopped walnuts
1 tbsp of butter
¼ cup of flour
¼ tsp salt
1 tsp of cinnamon powder


 
1. Preheat oven to 180C. Butter a loaf pan. Mix all the streusel ingredients together and set it aside.
2. Sift flour, baking powder and salt into medium bowl and set it aside. Using electric mixer, beat butter and sugar until fluffy and creamy.
3. Beat in eggs 1 at a time. Until well combined. Mix in vanilla. Mix dry ingredients and fresh cream alternately into butter mixture in 3 additions. Mix well.
4. Pour 1/2 of batter into prepared pan. Sprinkle with half of streusel mixture. Pour the balance batter on top of the streusel. Sprinkle the balance of the streusel on top of the cake.
5. Bake the cake 45-50 mins until golden brown or tester inserted at the center comes out clean. Cool cake in pan. To remove the cake from pan.

Parmesan Cheese Cake


Parmesan Cheese Cake

At first I thought water bathed the cheese cake & it would be soft and moist, aiya who know water seeping into the bottom layer! The bottom became solid and lumpy cake. Half of the cake went into trash bin, the other half....thank God my 2 kids loved it so much! It tastes really good even I sandwich it with a slice of whole meal bread..".roti cake"...yummy!


1) 3 eggs yolks, beaten
2) Add magerine 40g, fresh milk 75g,  mix well
3) Sift the low protein flour 70g, parmesan cheese 50g
Mix well all above ingrediants
4) eggs whites 120g, tartar powder ½ teaspoon, sugar 60g, hit till stiff
5) add 1/3 eggs white mixture  each time into the egg yolk & flour mixtures
6) pour the batter into 18cm mold (strictly no loose bottom cake tin), water-bath bake in 180C for 45-50mins



Banana, Cranberry & Apple Loaf Cake


I had a green apple left in my fridge and didn't know what can do with it since nobody likes to bite it away. Also a small box of cranberries was left at corner in my kitchen since CNY (not yet expired though)! I saw this recipe from My Kitchen Snippets and decided to have a try (since she claimed it was very simple and it turns out it is true indeed)! On my way home from work, I rushed to the fruits stall near my house and asked for ripe bananas that I could make the cake right away! I got them!

                   








Ingredients:

1 ½ cups flour
½ tsp baking soda
1 tsp baking powder
¼ tsp salt
¾ cup sugar
2 eggs
½ cup + 2 tbsp vegetable oil
4 tbsp milk
1 tsp vanilla
1 cup dried cranberry
1 apple – grated
3 large bananas – mashed


1. Line and greased a loft pan. Pre-heat the oven to 350 degree F.
2. In a mixing bowl, combined flour, baking powder, baking soda, salt and sugar. Mix well and set it aside.
3. In another mixing bowl, combined eggs, milk, oil, vanilla, grated apple and mashed bananas. Mix it well with a big spoon. Sift and add in the dry ingredients into the eggs mixture. Mix until combined
4. Lastly add in dried cranberries. Mix well and pour it into the baking pan. Bake for 50 minutes or until golden brown.

One-bite crispy 一口酥

                
Take One bite and it really melted in the mouth! 


Ingredients (I made 60 pieces)
Recipe From Small Small Baker with some little adjustment


Pastry:
100g unsalted butter
55g icing sugar
40g egg
145g cake flour
40g ground almond

Filling:
300g pineapple paste (or any paste you like)

Topping:
1 egg yolk, for glazing

Method

1. Whisk butter and icing sugar until pale and fluffy.
2. Gradually add in egg, whisk until combined.
3. Mix sifted cake flour with ground almond. Add into egg mixture and combine to form dough.
4. Wrap the dough in cling wrap and chill for 1 hour.

5. Divide the filling into 5 portions, 50g each (i prefer little of paste wrapped so it weighs down the sweetness of the pineapples) Roll each into a long strip of 20-25cm.
6. Divide the pastry dough (in step 4) into 5 portions, ~70g each. Roll each dough into a long strip of 20-25cm, flatten, put the filling in the centre. Wrap and seal well.
7. Roll the wrapped dough slightly to make sure the long strip is of even thickness.
8. Cut the long strip evenly into 2cm portions.
9. Brush egg yolk on top 2 times
10. Bake in preheated oven at 180 deg C for 10-15 minutes till nice golden brown.

Honey walnuts cornflakes



Ingredients:-
80g walnuts/ almond

65g butter
3tbsp honey
1 ½ vanilla essence
200g corn flakes

Method:
  1. melt butter and honey over low heat or until slightly thick. Remove from fire, add in vanilla essence walnuts/ almonds and corn flakes
  2. spoon mixture into small paper cup.
  3. bake in preheated oven at 160C for 10-12mins

Started with my father's heart attack, daugther fell sick, my aunt whom took care of me when i was a little girl died in hit and run accident..... I chose to believe God has a great plan for this year!!!!!!!!!
