To assemble the cake is so far so good & done well! But put the cream coat over 3-tier cake was rather challenging! To put cream over a cake is only for public function bcos it looks nice & presentable ! In private celebration the frosting is not favoured in my house! <br />

Thank God for a revelation how to make a box to contain my tall cake & transport it to the school ( a walking distance though)! It took me 3 pieces of gift wrapping paper & a 13" paper cake box ( cut & remove the top lid). Use the 2 wrapping papers wrapped & sealed the cake box vertically ( to unfold 2" length at the end of the wrapping paper outwardly & the paper be able straight & stand) 1 wrapping paper folded into a lid-' to fit the tall box now!" While making this box midnight, the IKEA paper box flashing through my mindHaha... To save trouble u may opt IKEA!!!<br />

Cheese cake with Nutella Topping!<br />
<br />
Ingredients:<br />
(A) 200g Cream Cheese, 20g fine sugar<br />
(B) 2 Yolks<br />
(C) 25g low protein flour<br />
(D) Whipping cream 100g<br />
(E) 2 Whites,40g fine sugar<br />
<br />
Method:<br />
1.Preheat oven 160C with a tray of water ( water bath)<br />
2.Line the bottom of 6" baking pan with paper.<br />
3.Cream (A) until smooth. Add in (B) mixed well.<br />
4.Add in (C) and mix until well blended.<br />
5.Pour in (D) by batches and mix until well combined. <br />
6.Whip Whites in (E) until foamy.<br />
Add in sugar, whip until soft peak.<br />
7.Gently fold 1/3 whites into yolk mixture until well-mixed.<br />
8.Fold in the rest of whites. Mix well. Pour batter into baking pan. Place on top on water-bath.<br />
9.Melt 10g of dark chocolate with 5g whipping cream. Paour chocolate mixture into a piping bag. Pipe lines on top of cake and use a toothpick to draw patten. <br />
10.Bake in preheated oven for 60 minutes. Remove cake from oven and allowed to cool completely. Place cake in the fridge for 4 hours to chill. 11.Remove the cheesecake from the pan. Cut into slices and serve.<br />

Topping<br />
2 tablespoon Nutella <br />
2 teaspoon whipping cream<br />
Mix well & spoon into piping bag & pipe it in the top of cake!<br />

What triggered me to start it was <a href="http://nasilemaklover.blogspot.sg/2012/07/steamed-vegetable-dumplings-chai-kueh-1.html#more" target="_blank">Sonia</a> again emphasized that the skin was so soft by using teng flour ( a flour I never had one in my storage) & I decided no more postponed it or drowned it in my super long bookmarks!<br />

Rather tricky to handle/ seal the skin in the beginning but once they were brought out from steamer I couldn't stop eating them!!! Very Worth it! Very good recommendation !<br />

炸萝卜糕 (食谱取自Jane's Corner加了少许改变)<br />

材料:<br />
350克白萝卜刨丝<br />
虾米适量<br />
低盐培根适量;切丝<br />
250克粘米粉<br />
40克木薯粉<br />
1大汤匙澄粉或番薯粉<br />
800克水<br />
<br />
调味料:<br />
盐1/2茶匙,糖1 大匙,胡椒粉1/2茶匙,一茶匙maggie鸡精粉,麻油数滴,炸小葱少许<br />
<br />
做法:<br />
1.将白萝卜丝煮软透明,水倒掉沥干备用。<br />
2.将粘米粉;木薯粉及澄粉加入350m克的水用手搅匀备用。<br />
3.起油锅,爆香虾米,加入培根<br />
倒入白萝卜丝,加入剩余的水,再下调味料。<br />
4.慢慢倒入面糊,小火不停的搅拌,至成浓糊状。<br />
5.倒入涂上(炸小葱油)油的8”蒸盘里,大火蒸45分钟至熟即可。<br />
6.完全凉了才切片。<br />

I was so quick to think of making this bread with that water roux bread recipe from Jane's Corner! I try this bread recipe before with the filling of the bacon mashed potato & purple sweet potato ( both fillings recipe from Nasi Lemak Lover) ! It was really good! My family really love the breads! <br />

This is my 2nd try in making a bread! 1st time the bread was chewy & dry next day! I must really thank <a href="http://nasilemaklover.blogspot.com/2012/04/mashed-potato-bacon-bread.html#more" target="_blank">Sonia's mash potato recipe</a> and <a href="http://janechew.blogspot.com/2012/05/chili-salami-mashed-potato-bread.html" target="_blank">Jane's Corner bread</a>. The bread texture was so soft (even the next day) and the mashed potato with bacon was so tasty, both put together is more than perfect! A must try recipe! Black noodles, black soya sauce fish & pork & chicken, dark chocolate cake , kopi O ( black coffee) are my favourite too! I made this cake not only for it's color & also the fragrance of the palm sugar! I love it as it was so soft & not oily at all!<br />
Inspired by <a href="http://cookingcrave.blogspot.com/2009/04/easy-steamed-cake-ma-lai-koh.html" target="_blank">Tin Tin's Ma Lai Ko</a>. I replaced the castor sugar to palm sugar (sieve it before use!) and 20g castor sugar (palm sugar not so sweet!). It was really good!<br />

<b><span style="color: black; font-family: Arial; font-size: 10pt;">Ingredients</span></b><span style="color: black; font-family: Arial; font-size: 10pt;"> (makes one 17cm chiffon tin) or cupcake square papercups<br /><br />40g egg yolks (about 2)<br />20g water<br />40g vegetable oil<br />55g banana, mashed<br />55g cake flour<br />85g banana, diced<br /><br />110g egg whites (about 3)<br />55g sugar<br />5g corn flour<br /><br /><b>Method</b><br /><br />1. Whisk egg yolks, water, vegetable oil and mashed bananas until well-mixed.<br />2. Add in sifted cake flour and whisk until well-mixed. <br />3. Add in diced bananas, mix well gently. Set aside.<br />4. In another bowl, whisk egg whites until foamy. Add in sugar gradually and add in sifted corn flour last and continue whisking until stiff peak form.<br />5. Gently fold in the egg white into the egg yolk batter (in step 3) in 3 batches. <br />6. Pour the batter into an ungreased chiffon tin. Give the tin a few slight knocks on the tabletop to remove air bubbles. Bake in preheated oven at 170 deg C for 35-40 minutes. <br />7. Remove from oven and invert the tin immediately onto a cooling rack.<br />8. Unmould the cake only when it is completely cool.</span></div>

Pour the balance batter on top of the streusel. Sprinkle the balance of the streusel on top of the cake.<br />5. <br />I had a green apple left in my fridge and didn't know what can do with it since nobody likes to bite it away. Also a small box of cranberries was left at corner in my kitchen since CNY (not yet expired though)! <span style="color: black; font-family: Arial; font-size: 10pt;"><br />Pastry:<br />100g unsalted butter<br />55g icing sugar<br />40g egg<br />145g cake flour<br />40g ground almond<br /><br />Filling:<br />300g pineapple paste (or any paste you like)<br /><br />Topping:<br />1 egg yolk, for glazing<br /><br /><b>Method</b><br /><br />1. Whisk butter and icing sugar until pale and fluffy.<br />2. Gradually add in egg, whisk until combined.<br />3. Mix sifted cake flour with ground almond. Add into egg mixture and combine to form dough.<br />4. Wrap the dough in cling wrap and chill for 1 hour.<br /><br />5. Divide the filling into 5 portions, 50g each (i prefer little of paste wrapped so it weighs down the sweetness of the pineapples) Roll each into a long strip of 20-25cm.<br />6. Divide the pastry dough (in step 4) into 5 portions, ~70g each. Roll each dough into a long strip of 20-25cm, flatten, put the filling in the centre. Wrap and seal well.<br />7. Roll the wrapped dough slightly to make sure the long strip is of even thickness.<br />8. Cut the long strip evenly into 2cm portions. </span></div>
